Why it works: Shallot and chive match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 450 recipes mention both. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓

Sauce Béarnaise

Ingredients

Directions

Prepare the reduction

  1. Chop the shallots and chives (or a small bit of garlic).

  2. Combine the chopped ingredients with the vinegar in a china-lined saucepan.

  3. Simmer until reduced by half, then strain and set aside.

Make the sauce

  1. In a bowl, break the egg yolks and whisk them.

  2. If needed, add lemon juice to the yolks.

  3. Melt the butter in a separate pan.

  4. Add the strained mixture to the yolks, whisking continuously.

  5. Gradually incorporate the melted butter until the sauce thickens.

  6. Season with glaze, pepper, and grated nutmeg.

What each ingredient does

Egg yolks
Emulsify the melted butter and thicken the sauce as they set gently with heat.
Butter
Provides richness and fat that forms the body of the emulsified sauce.
Shallots
Add aromatic onion flavor to the reduced vinegar base.
Vinegar
Adds acidity, which balances the richness of the butter and yolks.

The step that matters

Incorporating the melted butter. Adding butter too quickly or letting the yolks get too hot can break the emulsion, leaving a greasy, curdled sauce. Whisking continuously and adding butter gradually lets the yolk lecithin bind the fat into a smooth, thickened sauce.

Fit is the average pairing score against shallot, chive, vinegar, egg, lemon, butter, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
