Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Terrapin Sauce

Ingredients

Directions

  1. In a saucepan, combine butter, pepper, and nutmeg.

  2. Place the saucepan in boiling water (bain-marie).

  3. Add eggs and stir constantly until they begin to thicken, avoiding boiling.

  4. Gradually add the glaze while stirring continuously until thick like custard.

  5. Stir in vinegar; if not acidic enough, add lemon juice and salt carefully.

  6. If the sauce curdles or thickens too much, add a few drops of cold water and stir.

  7. Serve immediately with fish, lobster, chops, or grilled meats.
