Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shad roe
Forms the main body of the salad, giving it a firm, flaky texture once poached.
Mayonnaise or mustard dressing
Adds moisture and richness, coating the diced roe and binding the salad together.
Onion
Its cut side is rubbed on the plate, lending a faint aromatic flavour to the dressing.

The step that matters

Boil gently for 20 minutes. Boiling vigorously can toughen and break up the delicate roe, so a gentle simmer keeps it tender and intact for dicing.

Swap the onion

How well each one fits the dish's main ingredients (roe, mustard, lettuce):

  1. Horseradishfits better
  2. Chivefits better
  3. Cucumberfits better
  4. Onionthe original
