Rye Bread

Ingredients

Directions

  1. Prepare the wheat-sponge as directed in the bread recipe and let it sit overnight.

  2. The next morning, add enough rye-meal to prevent the dough from sticking to your hands.

  3. Knead the dough well and finish according to the same bread recipe.

  4. Slice the rye bread very thin, butter it, and serve it in tartines with whitebait or raw oysters.
