Orange Pie

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, cream the butter and sugar together.

  3. Blend the cornstarch with a little cold water, then stir it into the boiling water in a saucepan.

  4. Stir for 1 to 2 minutes, then add the creamed butter, sugar, grated orange peel, and orange juice.

  5. Remove from heat and stir in the egg mixed with a few drops of cold water.

  6. Line a deep pie dish with Flaky Pie-Crust and bake until firm and slightly browned.

  7. Pour the custard into the baked crust and return to the oven for 10 to 12 minutes, until the egg sets.

  8. Beat the egg whites until foamy, then gradually add the powdered sugar and beat until stiff and glossy.

  9. Spread the meringue over the pie, sprinkle lightly with granulated sugar, and bake for about 2 minutes until slightly browned.
