Chocolate Pudding

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the base

  1. Soak the cracker crumbs in water for a few minutes, then squeeze them out thoroughly.

  2. Dissolve the chocolate in a little of the milk.

  3. Add the remaining ingredients to the chocolate mixture.

Bake and top

  1. Pour the mixture into a buttered dish and bake at 400°F (200°C) for 15 to 20 minutes.

  2. Once cooled, prepare the meringue by beating the egg whites to a foam, then add the powdered sugar and beat until stiff and glossy.

  3. Spread the meringue over the pudding and place it in a very hot oven for about 2 minutes, just long enough to brown the meringue slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a tender, smooth texture to the pudding.
Egg yolks
Thicken the custard base and add richness as they set during baking.
Egg whites
Whipped into a foam and stiffened to form the light, glossy meringue topping.
Milk
Forms the liquid base that the chocolate and eggs set into a custard.
Powdered cracker
Soaked and squeezed, it adds body and helps bind the pudding.

The step that matters

Browning the meringue. The meringue needs only about 2 minutes in a very hot oven. Stiff, glossy egg white can scorch quickly, and sugar darkens fast at high heat, so it must be watched closely.
