Custard
Ingredients
Directions
If the custard is not melted, stir it over the fire until dissolved.
Strain the custard into a bowl and let it cool thoroughly before freezing.
Prepare your ice cream freezer, salt, and ice.
Pour the custard into the freezer's tin cylinder.
Pack the cylinder with ice and salt, then turn the crank steadily.
When the crank is difficult to turn, wipe the top of the cylinder carefully.
Scrape down the cream from the sides and add the chilled whipped cream.
Close the cylinder and freezer, ensuring no salt gets inside.
Turn the crank again until the mixture is too stiff.
Carefully remove the dasher, scrape down the ice cream, and smooth it over.
Re-cover the cylinder, stopper the hole, and pack with more salt and ice.
Cover with a cloth and set aside for 2 to 3 hours.
