Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
The white whips into foam that gives the drink a light, airy body.
Powdered sugar
Sweetens the yolk and dissolves easily into it for a smooth texture.
Sherry wine
Adds acidity and aroma that balance the richness of the yolk.

The step that matters

Beat the egg white until stiff. Under-beaten white stays runny and won't hold the foam, while over-beaten white turns grainy and dry. Stiff peaks trap air, so folding gently keeps the drink light.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, sherry):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well

Fit is the average pairing score against egg, sugar, sherry. Candidates are from the same food group and used in at least 100 recipes.
