Scotch Collops

Ingredients

Directions

  1. Hash the beef very fine, removing every thread and coarse fiber.

  2. Place the beef in a chafing dish and add a little cold water.

  3. Cook until gray-brown, adding a tiny lump of butter without stirring.

  4. Pat down with the back of a spoon, turning quickly and frequently.

  5. When nearly done, add a little hot water to make gravy.

  6. Dredge in a little flour, add a piece of butter and pepper, and mix well.

  7. Add a little salt just before serving.

  8. Serve the collops on slices of toast, topped with a poached egg.
