Pecan Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat together the butter and sugar.

  3. Add a little of the beaten egg, then mix in 1 cup of flour.

  4. Add some milk, then mix in another cup of flour and the remaining milk.

  5. Finally, add the rest of the beaten egg.

  6. For the icing, beat the egg whites until stiff, then gradually add powdered sugar.

  7. Mix in the grated pineapple and chopped pecans that have soaked in the pineapple.

  8. Spread the icing over the cake and place whole pecan kernels on top while the icing is still soft.
