Hard Yeast

Ingredients

Directions

  1. Boil hops in water until only 2 quarts remain.

  2. Strain the mixture and stir in wheat or rye meal until thick like batter.

  3. When the mixture is milk-warm, add the yeast and let it stand until very light, about 3 hours.

  4. Work in sifted Indian meal until it forms a stiff dough.

  5. Roll out the dough on a floured board and cut into oblong cakes about 3 inches by 2 inches and half an inch thick.

  6. Lay the cakes on a smooth board dusted with flour.
