What each ingredient does

Coffee
Its soluble flavour compounds dissolve into hot water, supplying the brew's aroma, body and bitterness.

The step that matters

Pour the water slowly through the strainer. A slow, even pour wets all the grounds evenly so they extract uniformly. Pouring too fast channels water through gaps, leaving weak, under-extracted coffee while the rest of the bed stays underdeveloped.
