Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Fat that softens the vegetables gently and adds richness to the soup.
Gravy soup
Liquid base that carries the vegetable flavour during the long simmer.
Carrots
Add natural sweetness and colour to the soup.
Onions
Add savoury depth and aroma as they soften.

The step that matters

Cover the stewpan and cook until the vegetables are slightly soft. Cooking the vegetables gently in fat with a lid softens them and concentrates their flavour without browning. Cooking too hard or too long can give a dull, stewed taste before the soup has simmered.

Swap the onion

How well each one fits the dish's main ingredients (turnip, celery, carrot, butter, beef):

  1. Leekfits better
  2. Parsnipfits better
  3. Potatofits about as well
  4. Onionthe original

Fit is the average pairing score against turnip, celery, carrot, butter, beef. Candidates are from the same food group and used in at least 100 recipes.
