Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the main body, colour and sweetness of the soup once puréed.
Turnips
Add soft bulk and a mild sweetness that thickens the purée.
Shin of beef
Gives the stock its meaty depth and body.
Cold roast beef or beef steak
Adds meaty flavour and body when rubbed through the sieve into the soup.

The step that matters

Remove all the fat from the stock. Fat left on the cooled stock floats and makes the soup greasy, so it must be skimmed off completely before the vegetables are added.

Swap the clove

How well each one fits the dish's main ingredients (beef, ham, veal, onion, carrot, turnip, pepper):

  1. Celeryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against beef, ham, veal, onion, carrot, turnip, pepper. Candidates are from the same food group and used in at least 100 recipes.
