What each ingredient does

Skate
Provides the main body of the dish, becoming tender and flaky when gently simmered in the sauce.
Flour
Thickens the broth into a smooth sauce when cooked with butter.
Butter
Adds richness and flavour through browning the skate and enriching the thickened sauce.
Hot vinegar
Adds sharp acidity that brightens and balances the richness of the sauce.

The step that matters

Boil the sauce and add the skate pieces 5 minutes before serving. Fish proteins toughen and dry out when overcooked, so the skate should only heat through briefly in the simmering sauce rather than boil for long.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, flour, parsley, chive, vinegar, mushroom):

Fit is the average pairing score against butter, pepper, flour, parsley, chive, vinegar, mushroom. Candidates are from the same food group and used in at least 100 recipes.
