What each ingredient does

Haddock
Forms the body of the puddings and supplies their main flavour.
Eggs
Bind the fish mixture so it holds its shape when boiled.
Bread
Soaked bread adds softness and body to the fish mixture.
Milk
Moistens the bread and keeps the puddings tender.
Flour
Starch thickens the strained broth into a sauce.

The step that matters

Fold in the beaten egg white. Beaten egg white traps air that keeps the puddings light and tender. Stirring it in vigorously deflates the foam, leaving dense puddings that may crack or toughen when boiled.

Swap the onion

How well each one fits the dish's main ingredients (haddock, bread, milk, parsley, egg, pepper, flour):

  1. Shallotfits better
  2. Potatofits better
  3. Chivefits better
