What each ingredient does

Haddock
Forms the main body of the dish, cooking to a flaky texture when fried.
Egg yolk
Acts as a binder so the crumb coating adheres to the fish.
Bread crumbs
Form a crisp golden crust when fried in fat.
Beef dripping or lard
Conducts heat for frying and browns the coating to a golden colour.

The step that matters

Drying the fish before coating. Surface moisture stops the egg yolk and crumbs from sticking evenly and steams the coating, so it fries less crisp. Drying the fish on a cloth before dipping helps the crust adhere and brown.
