What each ingredient does

Crabs
Provide the main meat that forms the filling.
Bread crumbs
Absorb moisture and help bind the filling so it holds together.
Butter
Adds fat and richness, helping keep the filling moist.
White wine
Adds acidity and aroma to the seasoned meat.
Vinegar
Adds sharpness that balances the richness of the crab meat.

The step that matters

Heating the mixture while stirring continuously. Constant stirring keeps the mixture from sticking and scorching on the base of the saucepan and warms it evenly. Gentle, even heat lets the bread crumbs absorb the butter and liquid, so the filling becomes cohesive rather than wet or burnt.
