What each ingredient does

Leg of mutton
Provides the meat that becomes tender through long, slow, moist stewing.
Onions
Add sweetness and savoury depth to the stock as they soften.
Carrots
Contribute sweetness and body to the stew as they soften.
Turnips
Add mild sweetness and soft texture to the stew.
Celery
Adds aroma and a savoury background flavour to the stock.

The step that matters

Stew until the mutton is tender. Tough cuts of meat need long, gentle, moist heat so collagen breaks down into gelatin. Boiling hard toughens the meat and dries the fibres, so keep the stew at a bare simmer and check for tenderness before serving.
