Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Binds the bread crumb coating so it adheres to the cutlets.
Bread crumbs
Form a crisp, golden coating that protects the lamb while frying.
Lamb cutlets
Provide the main meat, whose rich flavour is the centre of the dish.
Clarified beef suet
Frying fat that browns the coating and adds rich flavour.

The step that matters

Fry until light brown. Frying in hot clarified fat sets and browns the crumb coating quickly. Too low a heat lets the coating soak up grease and fall off, while over-frying dries the lamb.

Swap the nutmeg

How well each one fits the dish's main ingredients (lamb, egg, bread, parsley, lemon, pepper, beef):

  1. Marjoramfits better
  2. Thymefits better
  3. Tarragonfits about as well
  4. Nutmegthe original

Fit is the average pairing score against lamb, egg, bread, parsley, lemon, pepper, beef. Candidates are from the same food group and used in at least 100 recipes.
