Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Minced Veal
Ingredients
Directions
Cut thin slices of lean cold veal and mince them very finely.
Season the minced veal with white pepper, coarse sea salt, grated lemon peel, and nutmeg.
Put the mixture into a saucepan with a little white stock or water, lemon pickle, and mushroom powder.
Simmer gently without boiling.
Add a bit of butter rolled in flour and a little milk or cream.
Serve with thin sippets of bread cut into a triangular shape or cover with seasoned grated bread and brown it.
Alternatively, serve with poached eggs on top.
