Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Binds the meat mixture so the rolls hold together when cooked.
Flour
Absorbs moisture and helps the mixture firm up into shapeable rolls.
Raw veal
Forms the main body of the meatballs, giving a tender, delicate texture.
Boiled veal fat
Adds moisture and richness, keeping the lean veal from drying out.

The step that matters

Tie each roll in a cloth dipped in hot water and dusted with flour.. The cloth must be tight and floured so the roll keeps its shape and does not stick or split in the boiling water. Loose wrapping lets the lean mixture break apart during cooking.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, pepper, egg, veal, flour):

  1. Turmericfits better
  2. Parsleyfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against onion, pepper, egg, veal, flour. Candidates are from the same food group and used in at least 100 recipes.
