Potato Patties

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Wash and scrape the rind off the potatoes.

  2. Cut off the top and scoop out the insides.

  3. Mix the potato insides with veal, ham, cream, nutmeg, lemon peel, salt, pepper, and mushroom ketchup.

Fill and bake

  1. Fill the potato shells with the mixture and replace the tops.

  2. Trim the bottoms slightly to help them stand upright.

  3. Place them in a pudding dish with butter at the bottom.

  4. Bake in a 350°F (175°C) oven until heated through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the edible shells and bulk of the patties, holding the filling as they bake.
Veal
Adds savoury meat flavour and body to the filling.
Ham
Contributes salty, smoky meat flavour to the filling.
Cream
Adds moisture and richness, keeping the filling soft and smooth.
Butter
Adds fat that enriches the dish and helps the bottoms brown in the dish.

The step that matters

Trim the bottoms slightly. Potatoes need a flat base so they stand upright in the dish. If the base is too rounded or too thick, the patties tip over and the filling can leak out during baking.
