What each ingredient does

Anchovies
Dissolve into the liquid to give the sauce its savory, umami depth.
Port wine
Forms the main liquid base and adds sweetness and fruity depth.
Vinegar
Adds acidity that sharpens the flavor and helps keep the sauce stable.
Shallots
Contribute mild onion-like sweetness and aroma as they soften in the liquid.
Horseradish
Adds pungent, sharp heat that mellows during boiling.

The step that matters

Boiling the mixture. Boiling for the stated 15 to 20 minutes extracts flavor from the spices, anchovies and horseradish into the liquid. Too short a boil leaves the flavors weak and raw, while the sauce needs to be cooled before straining and bottling.

Swap the mace

How well each one fits the dish's main ingredients (anchovy, shallot, port wine, vinegar, lemon, horseradish, nutmeg):

  1. Capersfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Macethe original
