Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Stew the giblets in a little water with the onion, sweet herbs, salt, and whole black pepper.

  2. Season the fowl with white pepper, salt, and the minced onion.

  3. Remove the onion, herbs, and whole pepper from the giblet stew.

  4. Combine the fowl, giblets, and gravy in a dish.

  5. Add the white wine and mushroom ketchup.

  6. Cover the dish with puff pastry and bake for 1 hour at 400°F (200°C).
