Ingredients

Directions

  1. Clean, skin, and wash the haddock. Remove the heads and tails, and cut the fish into two or three pieces.

  2. Season the fish with finely-minced onion, parsley, coarse sea salt, and black pepper.

  3. Make forcemeat balls with a small boiled haddock.

  4. In a dish, place bits of butter, then add the fish and forcemeat balls.

  5. Pour in more than ½ cup of white stock and ⅓ cup of white wine.

  6. Place puff pastry around the edge of the dish and cover it with more puff pastry.
