Scots Seed Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the butter to a cream in a large bowl.

  3. Gradually add the sugar and then the beaten egg yolks.

  4. Mix in the flour a little at a time.

  5. Add the sweetmeats, almonds, nutmeg, caraway seeds, and stir in the brandy.

Bake

  1. Butter a cake pan and pour in the batter, filling it nearly to the top.

  2. Smooth the top and sprinkle with caraway comfits.

  3. Bake without moving or turning until nearly done.

What each ingredient does

Flour
Provides the structure that holds the cake together as it bakes.
Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Yolks enrich the batter and whites, when used, add lift and structure.
Loaf sugar
Sweetens the cake and helps the creamed butter hold air during mixing.
Candied orange peel
Adds concentrated sweetness and bright citrus aroma throughout the cake.

The step that matters

Beat the butter to a cream. Beating butter with sugar traps air bubbles that expand in the oven and give the cake its light texture. Under-beaten butter yields a dense cake.
