To Keep Currants for Tarts
Ingredients
Directions
Gather perfectly dry currants before they are too ripe and remove them from the stalks.
Place the currants in clean, dry, wide-mouthed bottles. Optionally, add raspberries.
Soak a piece of sound bladder in water and tie it tightly over each bottle.
Set the bottles in a pan of cold water with a little straw at the bottom and between the bottles.
Heat the pan on the fire until it simmers, maintaining this for about 45 minutes without boiling.
Remove the pan from the fire; the bladders will rise and then fall into the bottles.
After an hour, take the bottles out and cover each with strong paper.
Store the bottles in a dry, cool place, neck downwards.
