What each ingredient does

Red cabbages
Forms the main body of the pickle and gives it its colour and crisp texture.
Coarse sea salt
Draws water out of the shredded cabbage, softening it and concentrating its flavour.
Vinegar
Provides acidity that preserves the cabbage and gives it a sharp, tangy taste.
Cloves
Adds warm, aromatic spice to the pickling liquid.

The step that matters

Drawing out the water with salt. Hanging the salted cabbage for the full 12 hours lets enough liquid drain out so the cabbage stays crisp and the vinegar can penetrate it evenly.
