What each ingredient does

Carbonate of soda
Reacts with the acid to release carbon dioxide, which makes the drink fizz.
Tartaric acid
Reacts with the soda to release carbon dioxide and gives the drink a sharp, sour taste.

The step that matters

Pour the soda mixture into the acid mixture and drink immediately. The fizz comes from carbon dioxide gas formed when the acid and soda react. The gas escapes from the liquid quickly, so the drink loses its effervescence if it is left to stand.
