What each ingredient does

Meat head
Provides the main body of the potted meat once cooked and minced.
Calf's feet
Release gelatin during long simmering, helping the mixture set firm when cooled.
Minced onions
Add aromatic flavour that infuses the cooking liquid during simmering.

The step that matters

Simmer gently for 30 minutes. Gentle heat keeps the strained liquid from boiling hard, which would toughen the minced meat and cloud the liquid, so it stays tender and sets clearly.

Swap the onion

How well each one fits the dish's main ingredients (meat, parsley, thyme, pepper):

  1. Carrotfits better
  2. Shallotfits better
