Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Provides the meat, which becomes tender through slow stewing in the sauce.
Butter
Carries the curry powder's flavour and helps the fowl brown slightly.
Curry powder
Supplies the main spiced aroma and flavour of the sauce.
Cream
Adds richness and a smooth, mellow texture to the finished sauce.
Lemon juice or vinegar
Adds acidity that brightens the rich, spiced sauce.

The step that matters

Stew gently until tender. Gentle heat over a long time breaks down the connective tissue in the fowl. Boiling hard toughens the meat and can make the sauce separate or taste harsh.
