Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Shrimp Croquettes
Ingredients
Directions
In a small saucepan, rub together the butter and flour over gentle heat until the butter is dissolved.
Add water and beat well, allowing it to cook thoroughly.
Stir in the seasonings, lemon juice, and minced shrimp; reheat but do not boil.
Spread the mixture on a plate to cool and set until firm.
Roll out the mixture to about ½ inch thick and cut into rounds, squares, or preferred shapes.
Beat an egg and paint it over the shapes, then roll them in bread crumbs.
Fry in smoking hot fat until golden brown and garnish with parsley.
