What each ingredient does

Potatoes
Mashed starch that forms the soft body of the dish.
Eggs
Set and bind the mixture, and the whipped whites lift it into a soufflé-like top.
Salt fish
Provides the main savoury flavour and salty character of the dish.
Butter
Adds richness and fat, softening texture and aiding browning.
Milk or cream
Adds moisture and makes the mashed potato mixture smooth and loose.

The step that matters

Beating and folding the egg whites. Whites must be beaten to stiff peaks and folded gently so the air they hold is not lost. Deflated whites produce a flat, dense top instead of a light, risen crust.

Swap the potato

How well each one fits the dish's main ingredients (fish, milk, egg, pepper, butter):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Asparagusfits less well
  4. Chivefits less well

Fit is the average pairing score against fish, milk, egg, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
