What each ingredient does

Gelatine
Sets the liquid mixture into a firm, sliceable cream when chilled.
Cream
Adds richness and a light, airy texture to the set dessert.
Canned pineapple
Provides the main fruit flavour and body, with its pulp thickening the cream.
Sugar
Sweetens the pineapple and balances its acidity.

The step that matters

Rub as much pineapple as possible through the sieve. Pushing the pulp through removes fibrous pieces and gives a smooth texture. Gelatine needs to be fully dissolved and evenly distributed to set the cream properly, so the mixture should be well combined before it cools.
