What each ingredient does

Best end neck of mutton
Provides the main meat and rich flavour that the broth is built on.
Rice
Thickens the broth slightly as its starch releases during simmering.
Turnips
Add sweetness and body to the broth as they soften during simmering.
Spanish onion
Adds aromatic sweetness to the broth as it cooks.

The step that matters

Skimming the surface. Foam and fat rise as the liquid heats and simmers; removing them keeps the broth clear and stops it tasting greasy.
