What each ingredient does

Boned brisket
Provides the main meat, which becomes tender through long, slow simmering.
Flour
Thickens the cooking liquid into a light sauce as it is stirred in.
Jerusalem artichokes
Add starchy body and a mild, nutty flavor that holds their shape during simmering.
Lemon juice
Adds acidity that brightens the rich sauce and balances the meat's richness.

The step that matters

Add the flour mixture to the cooking liquid. Flour thickens only when it is dispersed evenly in hot liquid. Mixing it well with the liquid before serving helps prevent lumps and gives a smooth, cohesive sauce.
