What each ingredient does

Thin flank beef
Forms the outer wrap that holds the filling together as it cooks.
Chopped meat
Adds savoury body and moisture to the filling inside the roll.
Hard-boiled eggs
Add firm, sliced texture and a mild richness to the filling.
Onion
Contributes aromatic sweetness and savour to the seasoned meat filling.

The step that matters

Boil gently for 4 hours. A rolling boil can toughen meat fibres and break the roll apart, while gentle simmering breaks down connective tissue slowly, keeping the beef tender and the roll intact.
