Ingredients

Directions

  1. Make a forcemeat by chopping cold meat and mixing it with smoked beef or sausage.

  2. Prepare puff pastry and roll it out very thin.

  3. Shape the forcemeat into balls or triangles, sealing the edges well.

  4. Brush the edges with egg yolk to prevent bursting during frying.

  5. Fry in clarified dripping or melted veal fat until golden brown.
