What each ingredient does

Carp
Forms the main body of the stew, becoming tender and flaky as it cooks in the liquid.
Ale or porter
Forms the cooking liquid and adds malty, slightly bitter depth to the stew.
Gingerbread
Thickens the liquid and adds sweetness and spice aroma as it breaks down.
Brown sugar
Adds sweetness to balance the sharpness of the vinegar in the sauce.
Vinegar
Adds acidity to give the sauce its sour flavour, balancing the sugar.
Spanish onion
Softens and sweetens as it sautés, building a flavour base for the stew.

The step that matters

Bring the liquid to a boil, then cook the carp until done. Fish is delicate and overcooks quickly; once the carp is added, it should simmer gently so the flesh stays tender and flakes rather than breaking apart or turning tough.
