What each ingredient does

Ground rice
Thickens the milk as it cooks, giving the blancmange its firm, sliceable body.
Milk or almond milk
Forms the liquid base that the rice thickens into a smooth custard-like set.
Sugar
Adds sweetness and helps give the finished dish its soft, tender texture.
Almonds
Contribute nutty flavour and richness to the milk base.
Eggs (in the method)
Not used in this recipe.

The step that matters

Stirring the rice mixture into the boiling milk. Ground rice thickens as its starch swells in hot liquid. Stirring constantly keeps the starch evenly dispersed so lumps and scorching do not form on the base of the pan.
