Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, moisture and tomato flavor of the sauce.
Oil
Carries garlic flavor and adds fat to the sauce.
Garlic
Adds aroma and savory flavor when fried in oil until browned.
Chili vinegar
Adds acidity and a little heat to brighten the tomato flavor.

The step that matters

Simmering the tomatoes until the juice is dry. Tomatoes hold a lot of water, and reducing that moisture concentrates their flavor and thickens the sauce. Stopping too early leaves a thin, watery result that may spoil sooner in storage.

Flavor stand-ins for the white pepper

How well each one fits the dish's main ingredients (tomato, clove, garlic, vinegar):

  1. Cuminbetter flavor fit
  2. Basilbetter flavor fit
  3. Oreganobetter flavor fit
  4. White pepperthe original

Fit is the average pairing score against tomato, clove, garlic, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
