Directions

Make the custard

  1. In a bowl, beat the yolks of 4 eggs and the whites of 2 eggs together.

  2. Add 2 tablespoons of castor sugar and mix well.

  3. Stir in 2 cups of cold milk and ¼ teaspoon of salt.

  4. Pour the custard mixture into the prepared dish.

  5. Grate ½ teaspoon of nutmeg over the top.

Bake

  1. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, giving it a firm, tender structure.
Castor sugar
Adds sweetness and helps the custard taste balanced.
Cold milk
Provides the liquid base that the eggs thicken into custard.

The step that matters

Bake in a moderate oven for 30 minutes. Egg proteins set gently as the custard heats. Too much heat or time can make the custard curdle, weep, or turn grainy, so it is best baked at a moderate temperature and checked for a just-set centre.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, milk, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Parsleyfits less well

Fit is the average pairing score against egg, sugar, milk, butter. Candidates are from the same food group and used in at least 100 recipes.
