Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

How to Roast a Turkey

Ingredients

Directions

Make the dressing

  1. Soak the bread pieces in warm water until light and flaky.

  2. Add the beaten eggs, sage, fried onion, pepper, and salt to the bread mixture.

  3. In a skillet, melt the butter and add the dressing, frying until golden brown.

Stuff and prepare the turkey

  1. Remove from heat and fill the turkey with the dressing, leaving room for it to swell.

  2. Push back the skin from the neck, cut it off, and stuff the breast from this opening.

  3. Sew the skin back over the opening and secure the legs to the breast.

  4. Rub the turkey with salt and place it in the oven.

Roast

  1. If using an enclosed pan, no basting is needed; otherwise, start with ½ pint of water and baste frequently.

  2. Begin roasting in a moderate oven, increasing the heat later.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Soaks up warm water and eggs to form a light, flaky dressing that holds its shape.
Eggs
Bind the bread mixture so the dressing holds together when stuffed and cooked.
Butter
Adds richness and helps the dressing brown golden in the skillet.
Onion
Adds savory sweetness and aroma once fried golden in butter.

The step that matters

Leaving room in the stuffing for it to swell. Bread dressing expands as it heats and absorbs moisture from the bird. Packing it tightly can leave the centre dense and slow the cooking of the dressing and turkey, so leaving room lets it expand safely.

Swap the onion

How well each one fits the dish's main ingredients (bread, egg, sage, butter, pepper):

  1. Capsicumfits better
  2. Shallotfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against bread, egg, sage, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
