Vanilla Toffee

Ingredients

Directions

Prepare

  1. Place the butter in a saucepan and add the sugar and vinegar.

  2. Let the mixture soak overnight. If it looks too dry in the morning, add a little more vinegar.

Cook and set

  1. Put the saucepan on the fire and boil without stirring.

  2. To test for doneness, drop a small amount into a cup of cold water; if it bites crisp, it's done.

  3. Just before it's done, add the essence of vanilla.

  4. Pour the toffee thinly onto a buttered tin and let it cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet, brittle toffee structure as it cooks and hardens.
Butter
Adds fat for richness and a smooth, tender bite in the toffee.
Vinegar
Adds acidity that helps keep the sugar from crystallising, giving a smoother toffee.

The step that matters

Boiling without stirring. Stirring can trigger sugar crystallisation, leaving the toffee grainy instead of smooth. Testing by dropping a little into cold water shows when the sugar has reached the hard, brittle stage.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, sugar, vinegar):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Apricotfits about as well
  4. Peachfits about as well

Fit is the average pairing score against butter, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
