Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it boils, giving the pudding its body and chewy texture.
Eggs
Set with heat during steaming, giving the pudding structure and richness.
Butter
Adds fat, which contributes richness and a smoother mouthfeel to the pudding.
Milk
Cooks with the tapioca to form the thick base and adds moisture.
Ratafia cakes
Add almond-like aroma and a light sweetness to the pudding.

The step that matters

Stir in the beaten eggs briskly. Eggs can curdle or form lumps if added to very hot mixture without quick stirring. Brisk stirring spreads the eggs evenly so they blend smoothly and set uniformly during steaming.
