Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Thickens the milk into a set, custard-like base once simmered and cooled.
Fresh eggs
Bind the mixture and set when fried, giving the omelet its structure.
Butter
Fat for frying that browns the outside of each omelet.
Granulated sugar
Adds sweetness and helps the surface brown during frying.
Lemon juice
Adds acidity that brightens the flavor of the sweet base.

The step that matters

Let the rice cool completely before adding the eggs. Adding beaten eggs to hot rice mixture can scramble them and leave lumps. Cooling the thickened base first keeps the eggs smooth and lets the mixture set evenly when fried.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, egg, sugar, butter):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
