Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm jelly as it cools.
Loaf sugar
Adds sweetness and balances the sharpness of the citrus juices.
Lemons
Provide acidity and bright citrus flavor, with rind oils adding aroma.
Seville orange
Adds bitter-sharp acidity and aromatic oils from its rind.
Madeira (or rich brown sherry)
Adds rich, nutty wine flavor and aroma to the punch.

The step that matters

Stir the isinglass until fully dissolved. Isinglass must dissolve completely in the hot liquid. Undissolved pieces leave specks and cloudiness and can weaken the set, so the jelly may not firm evenly as it cools.

Swap the lemon
