Ingredients

Directions

Prepare

  1. Cut the beef steak into pieces 1 inch wide and 3 inches long.

  2. Season the steak with pepper and salt.

  3. Make a crust by mixing flour, dripping or suet, and enough cold water to form a stiff paste.

  4. Roll out the paste and line a basin greased with dripping. Press the paste flat where it folds over.

Assemble and boil

  1. Place the seasoned steak in the basin.

  2. Add ½ cup of water.

  3. Cover with a small round piece of paste. Press to seal.

  4. Tie a cloth over the basin.

  5. Place it in a saucepan of boiling water.

  6. Boil for 3½ hours if using dripping, or 4 hours if using suet.

Serve

  1. Loosen the edge with a knife. Turn out carefully.

  2. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef steak
Provides the main meat filling, which becomes tender during the long steaming boil.
Flour
Forms the stiff paste that wraps the filling and holds its shape while steaming.
Dripping or suet
Adds fat to the crust, keeping it rich and tender as it cooks.

The step that matters

Seal the crust before boiling. Pressing the top paste firmly to the edge closes the pudding so water cannot enter and dilute the filling. The cloth tie then keeps the crust secure during the long boil.
