Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the curry and becomes tender during slow simmering.
Onions
Fried until golden brown, they add sweetness and depth to the curry base.
Curry powder
Provides the spiced flavour that defines the dish.
Baked flour
Thickens the liquid so the curry has body rather than being watery.
Rice
Serves as the starchy base that holds its shape around the curry.

The step that matters

Simmering the curry gently. Simmering gently for over an hour lets the veal become tender and the sauce thicken evenly. Boiling hard can toughen the meat and cause the sauce to reduce unevenly or stick, so constant stirring helps prevent scorching.

Swap the onion

How well each one fits the dish's main ingredients (flour, vinegar, veal, milk, rice):

  1. Capsicumfits better
  2. Shallotfits better
  3. Cucumberfits better
  4. Onionthe original

Fit is the average pairing score against flour, vinegar, veal, milk, rice. Candidates are from the same food group and used in at least 100 recipes.
